Simple chili recipe. The spices listed are the spices included in 1 package of Carroll Shelby's Original Texas Brand Chili Kit, except for the cumin and black pepper. I throw away the masa flour. You can use dried herbs instead of fresh for the basil/parsley. Cilantro should be fresh though. Makes 6 big servings.
| 596 | grams ground beef, browned (2 lbs 90% lean, browned and drained) |
| 6 | cups black beans (4 15oz cans, rinsed and drained) |
| 1 1/4 | cups tomatoes (1 can diced chilies and tomatoes, I use Ro*Tel, do not drain) |
| 1 | large white onion, diced |
| 8 | oz tomato sauce (Hunts or similar) |
| 16 | oz water |
| 1 | tsp salt |
| 1/4 | tsp black pepper |
| 1/2 | tsp cayenne pepper |
| 6 | tbsp chili powder |
| 1/8 | tsp ground cumin |
| 2 | tbsp lime juice |
| 1 | clove garlic, finely chopped |
| 2 | tbsp fresh cilantro |
| 2 | tbsp fresh basil |
| 2 | tbsp fresh parsley |
- Brown the ground beef, drain the oil. You can use leaner ground beef if you want but this recipe is already an A. :)
- Dump everything in a big pot and bring to a boil on medium-high heat. Cover and simmer on low for at least 20 minutes. Even better, slow cook it in a crock pot! I'm sure this would taste great after four hours on low!
