Pasole Recipe

Makes 6 servings


This is great in a crock pot for 8 hours on low.

Ingredients
2 lb. boneless pork, cut into 1" cubes
2 T bacon fat
1/2 cup minced onion
3 cloves garlic, minced
3 T chili powder
2 tsp salt
2 tsp oregano
1 tsp cayenne pepper
3 cups hominy (equivelant of 2 15 oz cans drained, 1 white and 1 yellow)
Directions
Brown pork in fat. Add onion and garlic- stir until golden brown. Mix in chili, cayenne, oregano, and salt. Add enough water to cover the pork. Mix in hominy. Bring to a boil. Reduce heat, cover partially and simmer until tender-2 hours on stove top.
