Pasta Fagioli Gi Jane Recipe

A simple pasta dish with beans

Ingredients
1/2 onion, finely chopped
1 tsp olive oil
1 clove garlic, crushed
1 salt and pepper
1/2 tsp oregano
3 oz cooked (or canned) cannellini beans
200 g chopped tomatoes
3 oz mushrooms, sliced
2 oz wholewheat pasta
Directions
  1. Cook the pasta according to the instructions on the packet

  2. While the pasta is cooking, heat the olive oil in a shallow saucepan and cook the onion and garlic until softened

  3. Add the rest of the ingredients and simmer for 10 - 15 minutes until the sauce is reduced

  4. Serve over cooked pasta
