Peach salsa - totally rocks my world!

This is the *best* salsa ever! You have to try it!!

Basic Peach Salsa

2 ripe, but firm medium peaches
1 tablespoon vegetable oil
1 tablespoon fresh lime juice
1/4 cup finely chopped red onion
1/2 cup diced red and/or green bell pepper
1 tablespoon chopped cilantro
1 teaspoon (or to taste) minced jalapeno pepper
1/2 teaspoon salt
fresh ground black pepper to taste

It sound so fresh!  I've made pineapple salsa with nearly the same ingredients, minus the oil.  Fruit salsas are wonderful!

salsa is my favorite thing in the whole world. when i feel really decadent, i'll take some peach salsa and put it on a serving of fat free cream cheese and eat it with whole wheat crackers. it's basically one of the best things ever.
