Penne Bolognese (Flat Belly Diet) Recipe

Yummy! Recipe calls for Fire-Roasted Tomatoes with green chillies, but to cut the spice level, I only used diced tomatoes w/ green chillies. Really quick and flavorful! Serve with whole wheat penne or bow-tie pasta.

Ingredients
1/2 lb ground beef, extra lean
1 tablespoon dried basil
1/4 sweet onion, diced
1/2 cup carrots, diced
1/4 cup extra virgin olive oil
10 1/2 oz diced tomatoes, with green chillies
3 tablespoons tomato paste
3 cloves garlic, minced
1/4 cup parmesan cheese, shredded
Directions
  1. Boil pasta separately, drain and set aside.

  2. Meanwhile, heat oil in a large skillet and add beef and basil. Stir to break up meat and cook about 2-4 minutes, it should still be pink.

  3. Add onions, garlic and carrots and stir. Cook until meat is no longer pink.

  4. Add tomatoes and tomato paste and bring to boil. Reduce heat and simmer 10 minutes.

  5. Remove from heat and stir in parmesan and pepper to taste. Serve over pasta.
