Penne Bolognese (Flat Belly Diet) Recipe
Yummy! Recipe calls for Fire-Roasted Tomatoes with green chillies, but to cut the spice level, I only used diced tomatoes w/ green chillies. Really quick and flavorful! Serve with whole wheat penne or bow-tie pasta.
| 1/2 | lb ground beef, extra lean |
| 1 | tablespoon dried basil |
| 1/4 | sweet onion, diced |
| 1/2 | cup carrots, diced |
| 1/4 | cup extra virgin olive oil |
| 10 1/2 | oz diced tomatoes, with green chillies |
| 3 | tablespoons tomato paste |
| 3 | cloves garlic, minced |
| 1/4 | cup parmesan cheese, shredded |
- Boil pasta separately, drain and set aside.
- Meanwhile, heat oil in a large skillet and add beef and basil. Stir to break up meat and cook about 2-4 minutes, it should still be pink.
- Add onions, garlic and carrots and stir. Cook until meat is no longer pink.
- Add tomatoes and tomato paste and bring to boil. Reduce heat and simmer 10 minutes.
- Remove from heat and stir in parmesan and pepper to taste. Serve over pasta.
