Peppery Zucchini Pasta (South Beach) Recipe

Makes 4 servings


This recipie excludes pasta, need to add pasta separately. Whole wheat penne is recommended.

Ingredients
2 tsp extra-virgin olive oil
1 small onion, finely chopped
3 garlic cloves, minced
3 pepperoncini, minced
1/4 tsp salt
1/8 tsp pepper
1 large zucchini, shredded
2 ounces goat cheese, crumbled
1 cup cherry tomatoes, halved
1/4 cup chopped fresh basil
Directions
  1. Saute onions, garlic, salt pepper and pepperoncinis.

  2. Prepare 8oz pasta

  3. Add pasta, basil, cheese, tomatoes and zucchini to the onion mixture and heat over a medium heat for 2 minutes.
