Im monika and i just joined calorie count. I have recently also become a pescetarian. This is when you dont eat animals apart from fish. My whole family dont agree with me being a pescetarian and this means that my family cook meals with meat in them.

Lately i've been making my own meals. Just i have the problem where im not a very skilled cook. I've been buying ready made salads but it getting boring and i relised that its not very good for my diet either. I want to start making home made things that are easy to make and dont require much time. And so i know how much calories go into it.

Does anyone have anything to recomend for me?

I'm a pescetarian as well and just joined.  Whats worse I'm in college and do not have a kitchen!  That being said all my easy recipes require only a microwave!

 I make a lot of brown rice and black beans.  Brown rice is a super healthy complex carb that comes in instant (though the non-instant is healthier--but it requires a stove!) and black beans give you great protein and are good for your heart.  To make it yummier I usually add a small amount of cheddar cheese and salsa.  To make it healthier--when I had a stove and counter top I added peppers, tomatoes, fresh spinach or any other veggies you really like!  You can simply sauté them in a frying pan with a little bit of oil (pick healthier ones like olive or safflower--butter is high in sat fat! margarine is worse because of transfats!) and stir it in!  Its delicious, high in fiber and super filling!

I also always keep morningstar fake meat on hand!  They have really yummy fake chicken patties that when I'm on the run having that with a little ketchup and some fresh spinach spinach on the side (easily cooked in the microwave with a tiny bit of oil and some sea salt) is a perfect meal.  Also for an entree I have had the gardenburger portabella burgers with a little brie cheese on top.  

Lunches for me tend to be a cheese and veggie panini (no oil/butter=healthier!) with hummus!  Organic peanut butter (no transfat that way) and low sugar jelly on wheat/whole grain bread or multigrain saltines (my favorite).  The worry with me is that I have a lot of cheese in my diet--mostly because I LOVE cheese--which does mean high saturated fat so I try to cut it out everywhere else in my diet!  

I eat a lot of brown rice, but if I had a stove I would also have whole grain pastas.  Carbs are not the enemy, only simple ones like sugar, white rice and regular pasta are!  If you stick with whole grains and oats carbs are really very good for you and these heartier carbs really fill you up more so than their simple counterparts!  Salads alone dissatisfy me and can be detrimental to dieting because of how hungry they can leave you--leading to binge eating or snacking on unhealthy foods.  Keeping almonds, fruit, luna bars, raisins etc on you will help curb cravings from m&ms and chips!  Good luck!  Hope this helped!

Try the Tassajara series of cookbooks.  They are vegetarian, pretty easy and you can add shrimp or fish to just about any of the recipes.
