Recipe Ingredients for Pho (Beef Noodle Soup)

16 ounces stewing beef
4 cups beef stock
1 tbsp sugar
2 cups rice noodles, cooked
1 tbsp fish sauce
200 grams bean sprouts , about 2 cups
2 onions, chopped
1 cup green onions, chopped
4 cloves garlic

Recipe Directions for Pho (Beef Noodle Soup)

  1. Additional ingredients not included in count above: cinnamon stick, black pepper, fresh ginger, fresh basil, fresh mint, limes, hot sauce/hot peppers.

  2. Brown beef in a pan over high heat to carmelize the outer edges. Don't worry about cooking the beef through as it will simmer in the broth and cook at that point.

  3. Add the chopped (white/yellow) onions and garlic to the beef and cook until transparent, about 5 minutes.

  4. Add the beef stock and bring to a simmer over medium high heat.

  5. Add 1/2 a cinnamon stick, 2 tsp chinese five spice powder, 1 tsp allspice, 1 tsp minced fresh ginger, 1 tbsp fish sauce, a bundled (with twine) handful of basil and mint, and 2 tsp of fresh ground black pepper (or 1 tsp of whole peppercorns).

  6. Let simmer for at least 30 minutes or longer if you can wait!

  7. While simmering, prepare the rice noodles according to instructions, don't overcook.

  8. Just before serving, taste the broth and season more if necessary. Add hot sauce or diced hot peppers to achieve the level of heat desired.

  9. To each bowl, add a quarter of the noodles, a quarter the bean sprouts, a quarter the green onions and a handful of fresh basil.

  10. Ladle the warm soup over the noodles and vegetables and enjoy.
