Went to Vietnam this year and became a Pho addict. I'd tried it before then but sadly got the pronouciation way off!
I adore this stuff...also the iced coffee with the condensed milk...do you know how to make it?

Ooooh this stuff is so good! All you really need is good, strong coffee and sweetened condensed milk. Make just like you would regular iced coffee, minus the sugar.
This is a great recipe if you'd rather skip the ox tails and beef knuckles.

use a french roast brewed in an espresso machine if you have one. chicory blends work too, or espresso. serve it with sweetened condensed milk and ice. i wish i had one of those single serving french presses. that would be perfection.

oh yeah! sluuuuurrrrppp!! I go for the rare beef though (cooks in the broth). I'm not a big fan of tripe.
Pho's our standard "I don't feel like cooking but want something fast, cheap and easy"...about $7 for a MASSIVE bowl with fresh sprouts and fresh herbs...probably have it 1-2 times/week (and the fresh salad rolls with shrimp and hoisin sauce with peanuts!).
Sometimes I mix it up and go for bun--rice vermicelli with carrots, lettuce, cucumber, herbs, grilled meat/shrimp topped with chopped peanuts and sweetened fish sauce with carrots! Hu tieu is damn good too--chicken broth with noodles (egg or rice), chicken/shrimp, celery and those yummy crispy garlic bits!
I've tried a few pho recipes but they're never nearly as good and a lot of work compared to 7 bucks and getting a steaming bowl in 5 min. I think the difference in homemade is the quality of stock (I used the tetra pack organic beef stock)--I think you probably gotta make it from scratch and simmer ALL the good bits to get the rich tasty stock you get at restaurants.
I am a pho junky! What other fast food actually gives you the option of fresh vegetables and tofu? And it goes so well with sri racha, another of my food addictions.
I like to make Vietnamese-style iced coffee as a special treat for weekend brunch with the hubs. I use a dark roast and brew it nice and strong in the French press, which gives it that great thick mouthfeel. Let it cool a bit, serve it over ice with sweetened condensed milk, and I'm in coffee heaven. It's so rich it is like a dessert.

I've also tried making it before, and it was good, but not as good as my loca place. One of these days I'll do an all-day stockmaking expedition, and I'll try again then.
YES! I love pho! Can't live without it. And, it's my daughter's fave.
li_li yeah the key to good Pho is a good beef stock. The stuff sold in the stores is just not up to the task, and making your own is "simple" but very time consuming. I am not sure how I feel about vegetarian Pho. It will probably taste good, but I wouldn't call it Pho.
Then again I am just a "white guy" who like Asian cuisine, so what do I know. lol

Ya i used to work at a Pho restaurant we also offered vegetable broth for vegetarians that was really good! My favorite is Pho Rau Cai (Tofu with vegetables) :)
Love it. I've been stuck at home with the flu for the past 4 days craving a chicken pho I had at a Vietnamese restaurant here because it's the closest thing to a chicken noodle soup and I love it spicy. Yum yum.

Ha! I agree--gimme stock made with oxtails and beef knuckles! I have to admit I'm not a fan of ALL Asian cuisine though...chicken feet are just not my thing ;)
I live in a city where there is a huge, lovely selection of Pho. I love it too, but haven't been having any since calorie counting. I'm always concerned about the sodium (something that really doesn't agree with me) and overall calories.
If anyone here has recommendations as to lower sodium common Pho (preferably with meat or fish), as well as guesstimates of higher ranges of cals (it's a guessing game, so I'd rather look at it as top heavy) I'd really appreciate your shared wisdom!
Loooooooove it, sans tripe. I hate the texture of tripe.
I like pho, but between udon and pho I'll take udon. I like the noodles a little chewier.

Yum!!! Vegetarian pho rocks. We have several Vietnamese restaurants here in town but only one that I am aware of that serves vegetable pho. It's sooooo good. And it's only $4 for a large bowl. :)
My fiance and I love Pho! It is our go to meal for when we're sick or feel a cold coming on. We're in an area with a lot of choices, so we were able to taste our way through a couple of small Pho shops before finding our favorites.
Anyone so happen to know roughly how many calories would be in a large bowl with just noodles (no beef)? I found a recipe that said 200 calories, but I feel like it should be more.
