How exactly is replacing egg whites with coke healthy???? I think calling these "treats" health is a bit of a stretch!
I dont do recipes per say, but these photo type cookbooks are the BEST!
I generally think this is a nice idea and the fotos are great but I am a strong believer of eating sugar is better than taking in all sorts of artificial sweeteners such aspartame. the same goes for products that replace fat with preservatives.
banana muffins can be made without sugar:
mix:
4 ripe Bananen
2 eggs or egg replacement or 3 egg white
1-2 cup berries
1/4 cup dates (in very small pieces)
1/4 cup oil
honey can be added too
2nd bowl:
2 1/2 cups flower (try different types)
2 teespoons backing powder
cinnamon, nutmeg, gloves
mix and bake 20-25 mins.

just a note, you said that replacing the 3 egg whites with coke zero saves 20 cal per muffin, but arent egg whites only 15 calories each? if you made 18 muffins, you only save like 2.5 cal/muffin.
momma3biker, I meant they are healthier as in lower calories ( I know low cal doesn't always = healthy)
sidd1981 I'm diabetic so I use artificial sweeteners over sugar, otherwise I would prefer sugar. Thanks for the natural recipe!
maggiejeter, the package says to add 3 extra large egg whites and 1 1/4 cup water, it says the packaged calories are 70, and the baked is 90 per muffin. Water doesn't have calories so I assumed it would have to be in the egg whites they are getting the extra 20 from.
