Hi gang! I am new here and had a great idea to share. Anyhow, not sure if this has been brought up. These days one has to cut corners as much as possible so I thought... Why throw out the pickle juice? I did a search on it and you can do all kinds of things with it. Like put in Cauliflower pieces to marinate or green tomatoes or even onions, try one of those and you have found a use for the pickle juice. What I did was put onions in it and I had part of a cucumber I put in. It was quite good. I am going to buy another cucumber today and make more pickles! They turn out really good. I still have the onions in it too.
Anyhow, just a way to stretch your dollar and be less wasteful.

hey! My friend says you can also put carrots and celery in there. Whatever you have on hand. Seeing as I have so many onions in the juice, I'm trying to figure out what to do with them. Maybe I will even sautee them and see how they taste after that...

I've been doing that for years and love the resulting pickled vegetables. My favorites are thin, diagonal slices of carrot, cross sections slices of cauliflower and strips of red onion. I just serve it as a pickle.
I've started adding pickle juice to my tuna salad- it tastes great and is perfect for dipping whole grain crackers
