HEY! Everyone! Im an INCREADABLY Picky eater! could anyone help me with any Low Fat High Calorie Recipies I never am able to hit my calorie count but always PASS my salt and fat content! Please help me out If you need the ingreadents I eat I'll list them right now :D

I'm pretty new at all this so get someone to double check the recommendations, but I would try:
Chicken Stir fry, use chicken carrots broccoli beansprouts if you like them, then add some rice noodles and a low fat stir fry sauce - I like sainsburys terriaki (sp) one. If you grill or george forman the chicken before you use it it will help to keep the fat down.
Healthy sausages with carrots and mash potato. You can either get normal sausages and grill/GF them or tesco do a nice range of light choice ones. If you add pasley to your carrots then you shouldnt feel the need for any salt, and if you get sainsburys vivaldi potatoes you won't need any butter to mash them just maybe a tiny splash of milk. (If you'd normally salt your potatoes try adding either pepper or garlic to flavour it.
For treats - I love fresh real coconut smashed up with marshmallows ontop grilled until golden, its virtually fat free if you use tesco fat free marshmallows.
And try fat free yogurts there are loads of flavours about, just a case of having a look.
Do you eat pasta? If so you could do some pretty reasonable pasta dishes, use wholegrain if you can as its better for you, blend some tomatos, peppers, chilli/garlic if you like it, fresh basil onions and throw in some grilled chicken.
Hope this helps, I'm not great at watching my salt and fat but I think the best thing to do is eat fresh healthy stuff and flavour with herbs/garlic/chilli to avoid salt and just read packaging etc for fat content. If you don't already have one think about getting a george forman (the ones with removeable plates cost more but are a dream to clean.) you can do just about anything on it, i even do non fat flat chips by grilling slices of white potato for 20 mins or so on it. Yummy.

If you try to get in one portion of meat or fish (inc sauages etc if cooked healthy), and 2-3 portions of veg into your main meal (Inc potoatoes if cooked healthy), then have 2-3 items of fruit as snacks, one bowl of cereal for breakfast, a lightish lunch with maybe a pitta bread with lettuce and chicken, or soup with pitta or a granary bap, a low fat yogurt, perhaps more fruit or carrot sticks or a low fat cake bar (weight watchers or mr kipling delightfuls) on a naughty day.
Some might say not to eat bread and potatoes but I think its not the items themselves that are fattening its the 2 inches of butter plastered on top (I do it like the best of them). If you like chilli try using chilli dipping oil instead of butter on bread, its an aquired taste. (I love the butter too much so limit bread to one of my treats but know a few people that survive with the oil.) Or you could try flora type things - just watch the salt on them.
It takes some getting used to doesn't it, I'm struggling to eat my 1200 cals before being full in a day. I work shifts which doesn't help my eating pattern.
Yes It is very hard trying to get into the routene of eating proper foods when everyone arround you is eating all fat and not gaining a single pound ;(
I too am a picky eater. For breakfast I have 1 package of instant oatmeal, and half of a bannana. I then have a mid morning snack, usually fruit, for lunch a salad. I like most of my veggies raw, so It is hard to find a lean causine that I can manage to eat. I have managed to eat a baked potato and a small salad for dinner. With my salad I eat my raw veggies to make sure I am getting my daily intake, however on my potato I do not put any butter on it, but I am using the wishbone fat free italian dressing, 20 cals for 2 tbsp. You can also marinate your chicken in the italian dressing, which adds flavor without any fat and limited calories. I try to always add a small salad with any nightly meal I have. for snack I have tried either another fruit, an Orvill Redenbacker's smart cakes, which only have 45 calories per cake, 1% sodium. Also I have noticed most hot sauce does not have any fat and low calories, so I have experimented with using that as a "sauce". The down side of hot sauce is the sodium, if you are watching your salt intake. I have been on this diet for about 3 days now, and it is not so bad. I have realized going to the store is not as easy anymore when you look at lables. Good luck and try to mix things and experiment a little bit with things you like.
Adam, these people are giving you some wonderful ideas. Take them to heart my friend. There's some things I never even thought of, and now I will try. I'm so glad you're sticking with it. I want to see you on The Next YouTube Star show, as a slim young man that you can be. Your food list isn't really that short. There's a lot of good stuff in there. Try to find a lower fat version of the breakfast meats. I'm going to buy some chicken sausage and remake a favorite casserole of mine so I can have more then just a few bites. I've tried turkey bacon and it wasn't too bad. I had some FF waffles and SF syrup and wished I'd had some bacon a.k.a. facon
