I want to make a pie for myself and the boyfriend this weekend and he's really picky. He doesn't like fruit pies or things with nuts.
Does anyone have any tried and true pie recipes that aren't fruit or nut? It doesn't really need to be "healthy" but a lightened up version would be appreciated, as he always gives me grief for baking caloric stuff. (We all know it tastes the best sometimes :)

How about a banana cream pie..minus the fresh cut bananas of course! You can easily lighten that up by using skim milk for the banana pudding and light or ff whipped topping. We sometimes mix it up by using one of those chocolate pie shells and then adding shaved chocolate up on top!!! Yummy!
It's not a pie, but I do a dessert that men like. At least every time I make it all the men go nuts and eat it all up. It has to be made the night before.
You need Stella Doro Anisette Toasts
if you can't get those where you live, any dry biscotti with anissette flavor will work. Lady fingers work as well, but you should leave them to get a bit dry first.
In a 9" x 9" baking dish, arrange a layer of biscotti, breaking them to fit in the corners. They don't have to be tightly packed together.
Make a large box of Jello Cook & Serve Vanilla pudding. If you can't get pudding mix where you live, Bird's Custard Powder works. You'll need at least 3 cups hot pudding.
Ladle half the hot pudding over the biscotti. Make another layer of biscotti on top of that and pour in the rest of the hot pudding. Smooth the top and cover with plastic wrap right on the surface of the pudding to prevent a skin from forming.
Cool and refrigerate overnight. Just before serving, spread whipped cream or whipped topping over the pudding and decorate with chocolate shavings or sprinkles.
Cut in squares and serve right from the dish. The biscotti becomes like sponge cake and everyone thinks you slaved for hours making this Italian cream cake.
My dad is a diabetic and he used to always make a supppper easy chocolate pie for us (doesn't taste "healthy") and all you do is get a premade gram cracker crust- sugar-free or fat free (or normal if you wish) pudding and cool-whip. Just make the pudding according to the package, scoop into the crust and top with cool-whip. Chill in the fridge for an hour or two.
Yum!
Or you could do a cheesecake. There are a million healthier versions cheesecake recipes if you google it.
This is also so good, but not low cal unless adjustments are made.
Butter Pie (it's not what it sounds like):
1 premade crust ( I use low fat graham cracker crusts)
Filling: 1 cup milk ( I use skim), one egg, one heaping tablespoon flour, one heaping tablespoon butter, 1/2 cup sugar. Mix filling ingredients together, pour into crust and bake at 350 for about 45 min. The filling should firm up when cool, not be soggy.
I think this is also called chess pie by some people.
Now I kind of want to make more than one. I think I'm going to lighten up a banana cream pie and maybe also try something new, too.

Key lime is yummy and really easy. You can either buy a graham cracker crust (they have reduced fat, too) or you can make one. I like to make one with gingersnap cookies instead of graham crackers. You can also get the non-fat sweetened condensed milk and no one can tell the difference. It's certainly not low calorie, but it is a little better.
My favorite is lemon meringue, and the filling is similar because it used sweetened condensed milk, but it uses a normal pie crust and then you add big piles of fluffy meringue. I don't have the recipes on hand, but they are pretty basic and there are lots on the internet.
does he like cheesecake? You don't have to add fruit or anything- you could even coat it in chocolate :D
Super Simple cheesecake is:
gram cracker crust (or you can make your own...)
1 10 oz can of sweetened condensed milk (you can get the fat free kind)
8 oz of cream cheese (also available as fat free or low fat)
1/3 cup Real Lemon lemon juice.
combine the milk and the cheese with a beater then beat in the lemon juice, pour into your crust, stick it in the fridge for an hour and you're set! It's a super sweet kind of cheesecake, too.
