Ok, I have one foot back on the wagon after returning from my holiday, the other one dragging behind trying to get to the battenburg cake. But I am suffering a bout of being unmotivated to prepare my nice healthy foods.

So, bored of lettuce, cucumber and tomatoes, and too skint to have lobster and cashew nuts, what salads do you like to make for yourself..........?

 I have a very sweet tooth (curse) so things like yellow peppers are good.

When I'm preparing a meal size salad, and I have time I like this combination:

  • Mix of romaine, butter lettuce, and baby spinach
  • some Mann's brand shredded broccoli slaw which is basically thinny cut broccoli stocks, carrots, and cauliflower stocks.
  • White corn
  • Garbonzo beans
  • Red kidney beans
  • Sliced pepperonchinis
  • Avocado
  • Diced mango
  • Sometimes blueberries
  • Parmesan cheese
  • Cilantro Lime creamy dressing
  • Diced spicy grilled chicken breast hot off my indoor grill
I toss a little of all those items together in a big bowl and it's fantastic.  It sounds like a strange combination, but everyone I know has loved it.  The shredded broccoli-carrot-cauliflower mix really adds crunch, and it really cuts down on the prep time.  You can find it in the produce section - it doesn't have any heavy mayo or dressing mixed into it.  It's just veggies cut up and ready to go.

Thank you people!!  I've put back on another lb from eating cake and avoiding the gym (strangely)!!!  :o)  but I'm on track today, have had a lovely salad of lettuce, sweetcorn, peppers, cucumber, tomatoes, beansprouts and peas with a small amount of balsamic dressing and a side cup of sweet pepper and tomato soup.

Tonight I am going shopping for a load of things that you have all listed.  Thanks again.

last nights salad was fresh mixed greens, red onion, tomato, balsamic vinegar, a tiny bit of toasted sesame oil (sorry, love the flavor), some toasted pine nuts, half a can of manderine oranges (drained) and a single 4" square of Sicilian pizza cut into strips.

When I make salads (which is every night) I always have a warm component too!!! So my salads usually consist of: Spinach, Bell Peppers, Cherry Tomatoes, Green Beans, Artichoke Hearts, Water Chestnuts, Straw Mushrooms, Sesame Seeds, Olives, cucumber, celery, and then for the warm part I usually roast zuchinni & squash with spices for a nice "dressing/topping" - to give my salad flavor...or I have roasted garlic brussel sprouts, or sauteed greens, or something else!! I eat a LARGE salad EVERY NIGHT and I never get bored of it, so if you do what I do I think you will be satisfied!
GIASBASH - I love your idea about roasting the zucchini and squash, that would be so easy to do with a little olive oil and balsemic and italian seasoning or just a little pour of light cheese fastastico dressing - it's a great marinade.  I am going to use this idea this weekend.  Thanks!

FYI - My favorite salad lately consists of mixed iceberg (for crunch), spinach and arugula topped with sliced mushroom and maybe some cucumber.  The key ingredients are: 1 tablespoon of dried cranberries, 1 tablespoon of bleu cheese crumbles and a half of a ripe pear, diced.  Garnish with some sliced fresh basil and a little balsemic dressing.  Maybe a couple of walnut halves, crumbled. My husband loves this salad!
