Thanks so much for those two links.  I love Indian food and I'm always looking for recipes and information.   Have you read any of Madhur Jaffrey's Books?  I'd be interested to hear what you think of them.

sorry i havent read his books. my recipes come from my mom! those sites offered recipes that were very similar to the ones my mom uses.

*sigh* thing is they are like 2000 cal in one meal with all the ghee... anyone have low cal Indian options they can think of?  thanks
Remember - you're the cook and you don't have to start with as much fat.  I use just 1 tablespoon of oil (not ghee) to get the spices and vegetables going.  Once you master the art of combining spices, or find a really good spice mixture (called masala), you can put together a pot of dal or a vegetarian curry in no time. Matar Paneer   is a good example - really low cal except for all that oil - so use less.

I think the thing most Indian dishes have in common is that the spices are cooked before the other ingredients are added.  There are many subtle flavors.
OMG ~ I love you guys!!

I spent almost two hours trying to find the nutritional values for Channa Saag on Tuesday, so I could add it to my food log! *not kidding!* I didn't have a recipe (so I couldn't just put it in the analyzer) and boy, was that frustrating!

My husband and I LOVE Indian...and now I can cook it myself! WOO HOO!

One question though....on both of those sites, they list ingredients with the number after it, right? So potatoes  2 nos means two potatoes?

claire, Madhur Jaffrey is one of my favorites.  I cook from her Indian Cooking book all the time and her katte chhole -- sweet and sour chickpeas -- is probably my favorite dish ever.  I also cook a lot of her meat recipes with tofu substituted.

Indian cooking can be really intimidating at first because there's a long list of ingredients to prepare and spices to measure.  But once you do it a few times it's really pretty easy.  Many recipes are based off of a ginger/onion paste, which you make by throwing an onion and some peeled raw ginger into the food processor, then adding spices and your main ingredients.  And most recipes cook just fine with about 1/4 of the oil called for.

I'm very lucky.  There is a small, family owned Indian grocery store not far from where I live.  I took a couple of cookbooks with me and the owner of the store and her daughter helped me find all the spices and gave me a lot of very good advice too.  I gradually accumulated a nice collection of spices and dal and learned how to use each one.  It was fun, delicious and very healthy too.  I cook Indian food about once a week.
Some indian restaurants carry spices for sale.  Also many of the harder-to-find spices like cardamom and black mustard seeds are available in bulk at health food stores.  Finding some of the beans and lentils, like mung beans or chana dal (yellow split lentils) can be a little more difficult.  I'm lucky to have a lot of asian and indian groceries nearby that carry these items.
Madhur Jaffrey also has an amazing book about vegetables and vegetarian cooking - not just Indian preparations, but all sorts of cuisines. She is a very engaging writer - you can just sit down and read the book cover to cover, and take in all the different little anecdotes telling about where she first tried certain things, and who taught her how to make them.
I like her a lot.  Have you ever seen her on TV?  She's been a guest on some of the cooking shows.
