Plain Pumpkin?

Quote  |  Reply
I have a can of plain pumpkin. If I heated it up in the microwave and added a little cinnamon and pumpkin spice do you think it would taste good plain?

Yes, I have done this, it's very tasty.  Except I add Splenda and a tiny bit of vanilla extract, so I don't know how it would be without any sweetener.  But sweetened up, it tastes like crustless pumpkin pie!

ratinhat,

Ooooh, that does sound good!  Maybe if I mixed in a little bit of fat free cool whip I could make a decent pumpkin mousse?   (Oooh, or maybe that Fage greek yogurt I recently discovered.....)

I get such great ideas from these forums!  Smile

is pumpkin filling at all? it says one cup only has 83 cals... if i mixed it with some healthy stuff would it keep me full until lunch if i had it for breakfast?

(getting a little creative here)

I would think so.  After seeing the original post, I looked up recipes with pumpkin.  I saw one for pumpkin-apple butter.  Just mix in about a 1/2 cup of diced apples with the spices and stuff, and you have a nice spread for some multi grain toast or a whole grain english muffin for a great breakfast.  You could even mix in some flax seeds or wheat germ to get some extra fiber.

hmmm...i'm intrigued.
If you need something to share (ie office party, barbecue), here's an "unpudged" fudge recipe with a can of pumpkin:

It's really good that way.
It's very filling because it's packed with fiber.  When I tried this, I thought it didn't look like much, but I was surprised by how full it made me!
Dear Lord. When I bought canned pumpkin at a local liquidator store, I had no idea what to do with it.

Then I had an idea to add it to a smoothie, as we were running low on fruit. With my vanilla whey protein powder, a bit of vanilla yogurt, some cinnamon, pumpkin spice, and lots of ice, it tasted like a pumpkin pie in smoothie form. It was under 100 calories and made a huge glass.

The exact measurements I used were: 1/3 cup pumpkin, 1/2 scoop vanilla whey, 1/4 cup vanilla nonfat yogurt, 1/2 tsp pumpkin spice, and a dash of cinnamon. It has some nice fiber to it, too!
I think it tastes a little "dry" without some sort of sweetener or other fruit.  I like it with buckwheat honey, cinnamon, and raisins.
