Planning a Mother's Day Brunch - would this be ok for a diabetic?

I am planning to make a special mothers day brunch for my fiance's mother, her partner and my fiance. His mom is diabetic and I want to know if this sounds ok. Can you please let me know of what you think of my menu.

For each person I will have:

  1. 2 pancakes - Whole Wheat pancake mix add milk and eggs type - 1/4 cup serving about 2 pancakes is 140 cal, 1g fat, fibre 3g, sugars 1g, protien 4g. Milk 1/4c. skim 23 cal & 13ml of Egg Beaters 6 cal. = 169 cal
  2. 100g sliced strawberries - strawberries 33 cal, sliced today and mixed with 1/2 tsp of sugar, 8 cal, to use instead of syrup on the pancakes. = 41 cal
  3. Cheesy crabby eggs - 100ml Egg Beaters 50 cal, 42g immitation crab 45 cal, 15g Light Cheddar cheese 45cal = 140 cal
  4. Turkey Breakfast Grill - 2 slices 60 cal
  5. Watermelon - 300g = 86 cal
  6. Chocolate Mouse - Dr.Oetker Light Milk chocolate mouse instant dessert mix sweetened with sucralose and fructose 35 cal, 2g fat, 1g sugar 1g protien. Made with 1/4c. skim milk 23 cal = 58 cal

Total brunch = 554 cal

looks pretty good -- if she is a type I diabetic she will need to cover with insulin, regardless -- if type II non-insulin dependent, it is still a good meal

How many carbs are in each of the dishes you are preparing? When diabetics count carbs, they include both sugars and regular starchy carbohydrates. One carb exchange is about 15g of carbohydrates, and the average meal should have anywhere from 3 to 5 exchanges.

overall it's pretty good but you can improve it a little, especially if she is insulin dependant.

 

For instance switch the sugar in the pancake , desert and fruit with a sweetner like Splenda, you can use the same amount as you would sugar and personally it tastes the same to me.

You could also switch the milk for soy.  Some diabetics (like me) find most milk raises their blood sugar too much so avoid it as much as possible.


As the above poster pointed out the carbs are the key especially with insulin, the more carbs you have the more insulin you have to take even with fruit.  I probably wouldn't eat all the fruit if the meal were made for me and stick with the egg and meat.

I have to applaud you for asking the question though as many people assume they know what a diabetic can have or just don't think about it at all.  Just like every meal every diabetic is different.

Thanks all! She is actually type 2 and does not require the insulin injections.  It went great and she absolutely loved it.  We didn't eat all the food I had prepared.  There was some of everything left.  She has called us 3 times since to thanks us and tell us how much she enjoyed it!! :)


Victualgirl - Actually I couldn't take the sugar out of the pancake mix cause it was a purchased mix.  I just looked for the mix with the lowest sugar, all the others were between 5-7g sugar - the one I got had 1g /  serving.  I probably shouldn't have put sugar on the stawberries at all, but I had some other ones that I put out without sugar and she chose those ones.  The Mouse mix was ... again a mix - I showed her the package before I brought out the dessert and asked if it would be ok.


Tadpole - I don't know how many carbs, I never count those.  Thanks though, now I know that I will need to consider that when I cook for her again.
