please help..I need a side for my dinner tonight!

My husband andI are grilling chicken and veggie kabobs on our grill and I plan on making some green beans with onions to go w/as a side but....I need something else....I would prefer it not be a veg( already alot of those) that is less than 100 cal per serving. Any ideas??? He is making pasta salad too and thats ok but I'm not  a huge fan, I would love some potatoe salad(yummy) but that is prob out of th ? consideribg my cal range.

Anyway any ideas are greatly appreciated!!!Thanks,Amy

you could still make potato salad with fat free mayonnaise, or

you could try wild or brown rice casserole (cook rice normally, pan fry some onions and/or mushrooms with cooking spray, then put everything in casserole dish, add low fat or fat free cream of chicken or cream of mushroom soup, with the required water, and cook in oven until bubbly).

Whenever I need some carbs with my dinner, I like to do whole wheat penne pasta then sautee it in in olive oil, fresh garlic and ground pepper.  It's simple, light and healthy.   have fun cooking!

maybe quinoa pilaf with jalapenos, onions and corn...it would probably be about 160. I don't know anything to get under 100.  you can find quinoa next to rice...hopefully!
You could make some whole-grain yeast rolls...just look for a recipie on LightNTasty.com where they have a search engine thing.

Sweet potatoes
I just made some yummy sweet potato biscuits this morning, and they are 90 cal each.

1 cup mashed sweet potato
1 Tbs maple syrup
3 Tbs oil
1 tsp apple cider vinegar
Salt
1 tsp nutmeg (I did a bit less and added pumpkin pie spice)

1 Cup WW pastry flour
2 tsp baking powder

Heat oven to 400. Spray a cookie pan. Mix ingredients through nutmeg together. Dump in flour and sprinkle the baking powder over the top. mix with a fork a little then add 2-3 Tbs water to get it to come together. Roll into 12 balls and flatten, put on cookie sheet and bake for 15-18 min until light brown an firm to the touch. Makes 12. This was from memory from a recipe in Vegetarian Times.

Mmmm!  Those Sweet Potato biscuits sound tasty Finchcat!  I definately will try making those!

 As for a side, I would probably go with a nice steamed wild rice, perhaps in a chicken broth to give it a bit more flavor.

I recommend bulgur ... few carbs and fewer calories than brown rice, and a great nutty flavor! (I made some last night!)

Looks like you already have your side figured out, but...  If you *really* want potato salad, you could always do a German-style potato salad, which is a vinger-based dressing, rather than a mayo-based dressing.  There are *lots* of recipes on cooks.com, but this one is along the lines of what I was thinking: http://www.cooks.com/rec/doc/0,1843,144185-241198,00.html&nb sp; (I think it might need a modification or two to bring down the calories, but it's a start.)

When we grill I take a big russet potato and slice it up lengthwise so the slices are 1/2 inch thick.  Spray them with some olive oil lightly and throw them on the grill.  Keep flipping them over as they get golden brown.  It doesn't take that long to cook them and they taste great.
