Please post Breakfast and Lunch Favourite Recipes
Hello everyone,
I'm looking for new ideas for easy breakfasts and lunches. Something quick and easy that doesn't take too many ingredients to make. I'm finding breakfast and lunch the hardest meals to prepare, because I'm trying to stay away from carbs and oats. I love lots of flavour.
Any ideas are most welcomed!

Why are you staying away from 'carbs and oats'?... You do realise that carbohydrates are a great source of sustainable energy, fibre plus lots of other important nutrients? Carbohydrates = fruit, vegetables, grains, legumes/pulses, nuts, seeds... Especially good in the morning when you need to recharge the batteries and the wholegrain types of carbohydrates are extremely useful. Balance them up with some protein and fat e.g. scrambled eggs on wholegrain toast, and it'll keep you going for ages.
If you're only eating fat and protein you'll find your options get really limited, really quickly and that's not so good for you.
I agree with gi-jane, you can very easily fit carbs and oats into a healthy and low-calorie meal plan, and you will feel MUCH more satisfied with your meal varieties and still be able to lose weight. I find if I eat no breads or grains I feel bloated and unsatisfied all day. Plus oats are extremely filling, a half cup serving only has 150 cals and makes me incredibly full and satisfied for a few hours.
Anyhow, my favorite breakfasts include:
Pumpkin oatmeal: 1/2 cup oats with 3/4 cup water and 1/4 cup vanilla soy milk, microwaved with 1/4 cup canned pumpkin, then mixed with cinnamon and splenda. SOO good for around 200 cals.
Egg whites: 1/2 cup egg whites scrambled with most any veggies, like peppers, tomatoes, or zucchini, then eaten with lots of herbs or put inside a pita or on toast.
Fruit and cottage cheese: Pretty much sums it up in the title! Any cut up fruit with 1/2 cup nonfat cottage cheese, and 1/2 cup fiber one cereal. Or use plain nonfat yogurt instead of cottage cheese.
Well I have no carb advice; if you're doing the low-carb thing, more power to you. However, know that just cutting some carbs out doesn't really benefit you. To get the low-carb benefits you need to go full-out on atkins.
Tuna+Cheese+Egg beaters can make a GREAT omelet. Even if you've never made an omelet, don't be intimidated.
1. heat pan REALLY hot with some butter / spray butter. You want the egg to immediately start cooking.
2. pour egg
3. sprinkle cheese (cheese is always first- that way it gets in the egg, yum)
4. spread out tuna (or any meat)
5. get a spatula under there and flip half of it over on itself
6. let it cook till bits are browning.
Even if you mess up, you still have GREAT scrambled eggs. Also - you can microwave eggbeaters along with the same ingredients if you don't have a stove! (just don't microwave a whole egg, scramble first)
Other good combos -
salsa on top, chicken and cheddar inside (plus peppers, onion, and mushroom and a bit of taco seasoning if desired)
mushrooms & swiss or mozzarella + spinach
bacon + cheddar + onion
broccoli + cheddar
make sure you pre-cook veggies a bit, or they will not cook fully!

I've been doing the egg omelet in the microwave this week, which I'm loving! It's so quick and easy and I can take it to work if I'm running late. I've been switching it up between a moderate serving of sausage, red peppers, cheese, onion and mushrooms (all toppings pre-cooked).
I don't eat oats because my skin tends to get hives. Unfortunately, I need to stay away from oats and nuts. I never used to be able to eat eggs either, so hopefully with time I'll be able to add them to my list in the future.
Today, I brought home made chilli in for lunch and as a snack sunflower seeds.
I'm what you meant call a carb addict. Moderation is a lesson I'm working on. So, I'm trying to stay away from carbs at the moment. I love sandwiches, for I treat myself to those for instance yesterday I had a crab meat sandwich for lunch. I don't think I can do the whole atkins diet thing. I'm trying to practice moderation and healthy choices, trying to stay away from pre-fab products with too many perservatives in them. I think this might be the best way, for long term results. It's the slower process of losing weight, but hopefully I will keep the weight off this time.
my favorite simple and quick breakfast/lunches:
-yogurt, a fruit, cereal, and nuts
-scrambled eggs with 1 egg and mushrooms and either cheese or milk and any other vegetable (i chop onions if i have the time) or spice
-leftovers sandwich- take meat/chicken/tofu (pretty much any) leftovers between 2 slices of whole wheat bread
-sanwiches are simple and easy, just 2 slices of bread and whatever you like in it (cheese, ham, tomatoes, peanut butter, smoked salmon anything really) - cream cheese and strawberry on bread is easy and sweet. mozarella, tomatoes, and basil is like pizza.
my more creative (tiny bit more time consuming) meals:
- 1/2 cup oatmeal cooked with 1/2 cup water and 1/2 cup milk, added apple slices, almonds, and a tsp of cinnamon
-1/2 cup oatmeal cooked with 1/2 cup water and 1/2 cup milk and 1 small piece of dark chocolate added, 1/2 a banana, and mashed pistachios
-chop up any vegetables you have and saute them with chicken or tofu or eggs or meat or beans
-theres alot of other recipes on this website..
I like to make "burgers" with Bison patties and portabello mushrooms. I also really like sandwiches with whole wheat bread some deli sliced turkey, and ham, a slice of Creamy Havarti cheese, and piled high with bunch of veggies. For sauce I use fage mixed with different types of mustard.

I've been meaning to try bison, unfortunately I never see it at the grocery store.
I am sure one of the hyper members will post all about grass fed, organic blah blah blah Bison meat and where you can buy it online at a very high price lol, but if it's not available regular lean beef works too. :) Main "star" is portabello mushroom. he he I almost forgot I also like to make sandwiches with white fish like tilapia. My motto is if you can grill it you can make a sandwich out of it, with the right sauce and cheese. ![]()
