I was running low on groceries, but had thawed out some Tilapia so I had to come up with something.  This is what I threw together:

Sautee some garlic (I used two cloves) in whatever oil you prefer (I used Country Crock Shedd's Spread)

Add a can of Diced Tomatoes, I had the can that included onions and green pepers

Add a can of Stewed Tomatoes

Cook that to a boil

Throw in the fillets, cook for about 5 minutes

 

Prep to eat time is less than 15 minutes and it was really quite delicious.

Yum! Sounds good.  I usually like to fry my tilapia.  I make a flour mixture with pepper and garlic powder in it, toss the fish around in it, then pan fry them in enough oil to just coat the pan.  I used olive oil once...but it's smoke point is a little low so I've used canola lately.  I eat that with rice and a green vegetable.  Very tasty too.

Wow! Great idea! I always fry/bake/grill fish, but I like this stewed fish idea... will try tonight!

Edited to add: I guess I should have said thank you for both recipes...! I think I like the first one best though- it just tastes wonderful and healthy. Wink

Yeah that was how I went through a bag of frozen tilapia fillets this past year at college.  Although now that I focus...I used pancake mix and not flour lol.  Either worksLaughing.
