A great way to prepare chicken or small game. You may add garlic and hot peppers to this dish if desired.
| 2 1/2 | pounds chicken |
| 2 | cups diced tomatoes |
| 1 | cup pepper, red, diced |
| 1 | cup onions, diced |
| 1 | cup mushrooms |
| 1/2 | cup tomato paste |
| 1/2 | cup white wine |
| 1/2 | tsp salt |
| 1/4 | tsp pepper |
| 1/4 | tsp oregano |
| 2 | tbs olive oil |
- Use a whole chicken, cut in 8 pieces.
- Wash the chicken and season on both sides with salt and pepper.
- Saute the onions in olive oil for a few minutes and add the chicken.
- Cook, turning often, until the skin on the chicken begins to brown.
- Add the wine and simmer until the alcohol cooks off
- Put the chicken and onions into a casserole dish.
- Use the same pan to saute the peppers and mushrooms.
- When soft, add to the chicken.
- Combine the tomatoes with the tomato sauce and oregano, and pour over the chicken and vegetables.
- Bake covered at 350 for 40 minutes or until the chicken is tender.
