What to do with "pork chop scraps" ?
Last night I bought a big package of pork chops (9 thick ones). I trimmed and individually vacuum-sealed each one (for freezing). But by the end, I had at least 2 cups of "scraps" - the trimmed fat and various bits of pork attached to it. I would say the scraps are about 50% of the white fatty stuff and 50% flesh.
Even though the purpose of trimming off all the fat was to get leaner pork chops for me, I felt like tossing the scraps would be a waste, so I kept them, hoping there was something I could use them for, either for myself (on a diet) or my husband (not on a diet). I am most certainly not a cook/chef, but I have the vague idea they might be useful for making some sort of soup or stock. Any ideas?
I think I would try cooking them (saute) and see if I could separate the lean from the fat afterwards. If so, then they would be great in soup, casserole or stir fry.
When I can't really separate them, well the dogs have treats. (I assume you don't have any or you wouldn't be asking. lol.)

You could pan fry the scraps and make a gravy from the drippings. (If your "not on a diet" husband likes gravy, that is!)
You don't want to eat that saturated fat. If you pan fry the scraps a lot of the fat will render out and you can pour it off. what's left is still fatty, but can be used to make stock. Frying it will develop a good flavor. I always have a container of cooked meat scraps and bones in the freezer. When I have enough, I put it into a pot with celery, carrot and onion ends, parsley stems, some garlic cloves and cover it with water. This gets simmered for at least 2 hours, then cooled, strained and defatted. Discard the solids. Refrigerate the stock and then skim the solidified fat off the top and discard it. You get all the flavor and very little of the fat.
Add the scraps to your next batch of pinto or navy beans. They'll make great flavoring.
I usually cook beans then refrigerate to let the fat gel. I scrap it off. Reheat and eat!

I make green chile out of pork, scraps or otherwise :) I just lightly dust them in flour, cook them in a bit of oil until the meat is done, add the rest of the ingredients and let simmer slowly.
