Pork Chops & Stewed Tomatoes

This turned out FANTASTIC!!! The rice almost tasted like stuffed peppers or spanish rice and the pork chops got super tender.

Recipe:

4 Lean Pork Chops

1 Large Onion, Sliced

1 Quart Stewed Tomatoes (Mine have celery & onions in it too)

Salt & Pepper

1-2 Cups Minute Rice

 

In my crock pot I put sliced onion on the bottom.   Then I layered my pork chops and dumped my stewed tomatoes over everything.  Salt & peppered.  Cooked on high for approx. 6 hours.  Approx. a 1/2 hour before we were going to eat I added 2 cups of minute rice and mixed well, covered and let it cook.  I had alot of juice and the rice sucked it right up and got super good.

I also used bone-in pork chops but if I would do it again I would like to use boneless because they got so tender the bones fell right off.

Note:  I didn't brown my pork chops before - I just added them partially still frozen.

You have to love a dish like this!  The only thing I would have done is skip the minute rice.  I always have precooked brown rice in the freezer, so I would have just dumped in a bag of that.  Actually, I've never used minute rice.  Is it good?
