Pork in a pot -- crockpot, that is! (Looking for suggestions)

Okay, once again, I beg your indulgence and assistance in coming up with something to make in the crockpot for dinner tomorrow night! I don't often buy pork, but did tonight, and now I don't know what to do with it! I have the following on hand:
  • Center-cut pork chops
  • Chicken breasts
  • Dry beans: navy and kidney
  • Canned beans: kidney, black, and .... oh, some other kind of white bean, the name of which I've forgotten
  • Canned pumpkin
  • Canned tomatoes (whole and diced), tomato sauce, and tomato paste
  • Celery
  • Carrots
  • Onions
  • Potatoes
  • Mushrooms
  • Lots of garlic
  • Frozen spinach, corn, peas, and green beans
  • 8 ounces of fat-free sour cream
  • Cheeses: romano, parmesan, cheddar, glouchestershire, chevre, swiss
  • almost every spice and herb known to man (or at least sold at Zabar's)
  • chicken broth
  • various rices and pastas, but no egg noodles (alas!)
I'm hoping to get a crockpot cookbook, but haven't yet, hence my pleadings for help! Thanks!

Put the tomatoes, chopped onion & celery, a cup of rice, 2 cups of water or broth, and seasonings into the crockpot.  Put the chicken breasts, or pork chops on top.  Cook on low for 8 to 10 hours.
