Pork in a sour soup with vegetables
| 1 4/5 | lbs pork ribs, boneless |
| 1 | lb chinese eggplant, chopped |
| 1/3 | lbs green beans, ends trimmed |
| 4 | large roma tomatoes, quartered |
| 1 | large yellow onion, quartered |
| 4 | cloves garlic, minced |
| 1 | tbsp canola oil |
| 10 | cups water |
| 1 | lb bok choy, chopped |
- Brown garlic and onions in one tablespoon canola oil.
- Add boneless country-style pork ribs, chopped into one-inch cubes, and brown.
- Add remaining ingredients and bring to a boil.
- Add 1 tamarind soup packet (1.41 oz.) and boil an additional 20 minutes.
- Serve with jasmine rice.
