Porquipine Balls Recipe

Lean, sirloin beef meatballs filled with tomatoes, spices, onions and white rice. this makes 24 meatballs and fills two casserole dishes! 1 serving = 4 meatballs

Ingredients
2 pounds beef ground meat
1/2 cup flour
2 eggs
2 cups uncle ben's instant rice
283 g. (1 can) hunt's diced tomatoes with green pepper, celery and onions
6 oz. tomato paste
1 tsp. garlic powder, optional
1 tsp. salt and pepper, optional
Directions
  1. Mix all ingredients in a large bowl, reserving 1/2 of the paste and 1/4 cup of the hunts tomatoes.

  2. Prepare 2 casserole dishes with light cooking spray. Form approximately 24 meatballs and place in dishes about 1" apart. Mix the remaining paste & tomato's together and pour over the top of the meatballs.

  3. Cover with foil and bake at 375 F. for approximately 45 minutes, or until cooked through. Remove the foil and continue baking an additional 15 minutes (this lightly bakes on the tomato/paste topping, giving it a glaze of sorts).

  4. Allow to cool at least 20 minutes before serving.
