Portabella Parmesan: only 132 cal per serving!
This dish is sooo wonderful, and healthy!
PORTABELLA PARMESAN
4 egg whites beaten (or 1 cup egg substitute)
1 cup whole wheat bread crumbs (Milton's whole grain in great)
1 spray extra virgin olive oil
1 medium onion, minced
1 clove garlic, minced
1 28-ounce can tomatoes, seeded and chopped, with their juice
11/2 tablespoons tomato paste
1/8 teaspoon hot pepper flakes
Salt and freshly ground black pepper to taste
3 tablespoons fresh basil, chopped
4 Portabella mushrooms
Olive oil spray for pan
½ cup grated Parmesan cheese
2 to 4 basil sprigs
1)Heat oil spray in a saucepan over moderate heat. Add onion and cook a few minutes. Add garlic and cook until onion is soft but not browned. Add tomatoes (and juice), tomato paste, hot pepper flakes, salt and pepper. Stir, bring to a boil and simmer 20 to 25 minutes. Remove from heat, add basil and let cool at room temperature. Check for seasoning.
2) mix breadcrumbs with ¼ cup parmesan cheese, salt and pepper to taste
3)Meanwhile,. Cut portabella?s into 1/4-inch thick slices. Dip in egg batter and then cover with breadcrumbs. Spray a pan with olive oil spray and place slices in pan, cook slices for about 15 min at 350 degrees until nicely browned.
4)Pour tomato sauce over Mushroom, sprinkle with cheese and garnish with basil sprigs. Serves 6 to 8 as a first course.
