Potato Cheese Soup w/ Bacon and Broccoli

Hey, I was just wondering if anyone could help me find a healthy recipe for this combination? I've been craving all of these things and soup, so I figured I'd try it out. Watcha' think? Tasty? Too high in calories?

This recipe doesn't look too bad. You could even cut it down a touch by pureeing part of the broccoli/potato mixture with some bacon drippings, if you have that instead of the butter, and cutting down on the milk/cheese for the soup base and finishing with a touch of crumbled bacon.

You could also use soy cheese and bacon bits to cut your caloric intake, or better yet, try some turkey bacon instead.

So soy cheese has nearly twice as many calories as fat free cheese, doesn't melt and isn't anything remotely similar to cheese.

Turkey bacon has the same amt of calories as pork bacon.

If I were you I'd go for a smoked gouda so you can get a full flavor with less cheese & definitely use a strip of real bacon!

You could try blending steamed cauliflower and broccoli with chicken broth, adding some dry nonfat milk powder (which will give it a richer taste than adding additional liquid) & top with cheese & bacon.

If you want the chunks of potato, you could do the cauliflower broccoli broth milk powder base & stir in a few grams of cubed steamed potato along with the cheese. That'll give you additional control over calories.

Now I want me some soup! Yum!

Make a batch of this Low Fat Cheese Sauce using only 2 tablespoons of the Wondra flour so it won't be too thick.  Season it to taste.  Chives would be very good in this. 

Cook some potatoes and partially mash into the cheese sauce, leaving some nice chunks.

Steam the broccoli until just crisp/tender and bright green.  Chop and add to the soup.  Garnish with the bacon bits.  Heat and serve.  Don't cook this for too long after adding the broccoli so it retains its pretty green color.  I hate gray broccoli.
