potatoes & vegies cooked with chicken
Howdy! I'm roasting a chicken for dinner tonight and plan on putting potatoes and vegies (carrots, onions, celery) around it to cook in the (fat :( and) juices. Anyone out there in cyberspace have an idea for figuring the increase in calories over just plain?
im having the same thing for dinner tonight...so yeah info is helpful
Usually I would just add 100 cals to the total veggie calories for good measure...but i really have no idea
and yes folks it tastes SO GOOD this way...and its one of the very few things I actually like...so dont just say "why dont you do it this way instead..."![]()

... I agree -- I have no intention of boiling, baking or roasting the vegies by themselves -- Sometimes you just need the comfort food!!
well comfort food for me is a huge chicken fried steak with cream gravy and mashed potatoes with lots of cream/butter...haha...im no help :P

I believe if you use the nutritional information for "Chicken, meat and skin, cooked, roasted" you will have a pretty accurate count.
Here is a cooking light recipe that includes vegetables roasted under a chicken. It has nutritional info, so maybe you could use those numbers?

Also, my Better Homes and Gardens cookbook has nutritional info for "Roasted Chicken and Vegetables"... this recipe says to parboil the potatoes, carrots and turnips, add a raw cut up onion and then drizzle them with melted butter or olive oil before roasting them along with the chicken.

799 Cal
51g fat (17g sat)
233 mg chol
657 mg sod
28 g carb
5 g fiber
54 g protein
Certainly not healthy, but I agree that vegetables are completely delicious cooked that way.

I only put a few quick sprays of OO spray stuff on the chicken/potatoes before I roast them.....yum! Leftovers are good...now that the juices have solidified I can get most of the fat off the top and use the goodies!

I use recipe Zaar because along with the recipies they also give all the nutritional info. I copy the ingredients into the recipe analyzer here to double check the numbers.

Here is one recipe that is 375 Calories per serving and thats cooking with Olive oil. So omit it from the recipe analyzer here.
