Potluck Help

I'm going to be going to a potluck and am supposed to bring a side dish.  I've been looking for something healthy since I know that there probably won't be too many healthy options available.  Since this potluck is a ways away, something hot probably won't stay that way over the course of the trip.  That last part is what I've been having issues with when looking up options.  Any suggestions would be appreciated.

How about a basic fruit salad?  Different kinds of melons, berries, other seasonal fruits - chop up and toss in some fresh mint leaves, and you're set.  

Or any kind of salad, really.  Put the bowl in a larger one with ice or an ice pack, and it will stay reasonably cool (depending on the length of the trip).

Or don't even worry about temp - bring bags of baked pita chips and several kinds of really good dips, like hummus or tampanade.

veggies and hummus (with whole wheat pita also is good)


if you have the time (i.e. the bbq is tomorrow) make a home-made tabouleh with quinoa instead of couscous, parsley, pepers, lots of lemon juice, olive oil and garlic.  yum.....
