Prawn & Catfish Chowder (tomato based)

Just saved this to "recipes" -- it's what's for dinner tonite :D

The catfish I use is labelled "basa fillet". It is similar to chilean sea bass. I just chop the catfish into 1" cubes while it's still frozen and just chuck it in the broth. The prawns I buy are pre-cooked, frozen, and with tails on. I just chuck them in to heat thru after the catfish.



Ingredients 4 cloves garlic, minced 1/2 medium white onion, diced 3 stalks celery, sliced 3 carrots, chopped 1 large potato, peeled and diced 1 tsp dried thyme 1/8 tsp cayenne 1/2 tsp black pepper 28 fl oz diced tomatoes 14 oz water 5 oz prawns, frozen cooked 10 oz catfish fillet, frozen dicedDirections
  1. Saute garlic, onion, celery and carrot in non-stick pan til onion is translucent (see through).

  2. Add potato, thyme, pepper, tomatoes and water. Bring to a boil, then simmer at low heat til potatoes are tender (about 20 mins)

  3. Add frozen diced catfish and simmer til opaque (very bright white).

  4. Add frozen prawns and simmer til heated thru.

I tried basa once and haven't seen it in the market since.  I thought it was similar to tilapia.  I know it's a fresh water, farmed fish and that it's not related to catfish, but that's all I know.

What a delicious recipe!  I like fish and seafood stews with tomatos.
