The only way for me to stay on-track is to figure out what I am going to have the next day and prepare what I can the night before.
When I get home from work, the kids all want attention, my husband wants to talk about his day and if I am not prepared ahead of time I resort to quick fix meals that aren't always the best.
On the weekends I like to turn my refrigerator into a mini subway. I use glad containers and slice up tomatoes, cucumbers, green peppers, red onions, mushrooms, etc. so that I can easily add vegetables to whatever I am making such as an omlet, salad, sandwich, or just snack.
I have a terrible time working fruit into my diet. Not much of a fruit eater and it seems to spoil fast. Not something I can usually prepare ahead of time which also makes it harder.
