I experimented today and found one I like :) Here it is

 

Lettuce

A little crumbled low-fat feta cheese (1 oz is plenty)

1-2 tsp of olive oil (and for ranch dressing lovers, if you must, 1-2 tsp of buttermilk ranch)

raw spinach

pepper to taste

*I also substituted the oil/dressing with a little lemon and added tiny pieces of apple, a few walnut pieces, and some dried cranberries (the kind with no added sugar). It was AMAZING :)

I am thinking of trying it with lean, grilled chicken or a little low-salt tuna in it. Of course, more veggies= better and anyone is welcome to alter this recipe and post suggestions. I just thought this was great, since I loved it. I usually hate salads unless they are covered in dressing, cheese, and high fat meats lol. Both ways were good and very filling, much healthier than normal without sacrificing taste. :)

I'm the same way, I usually can't stand salads unless they're loaded with dressing, etc. I'll have to give this one a shot :) I did something similar except it was: baby spinach, crumbled feta, sliced strawberries (fresh), and toasted sliced almonds

My wife and I have returned to having a big salad at nearly every dinner.  We avoid calorie-rich ingredients, seldom using things like cheese or nuts, focusing on items like fresh mushrooms, radishes, peppers (banana or pepperoncini).  For dressing, I make my own, using equal parts olive oil, red wine vinegar, and balsamic vinegar, mixing in some garlic powder.  Given a choice, it's the only dressing my wife wants to use!  I also discovered a line of no-calorie dressings from Walden Farms.  The line includes Blue Cheese, Ranch, Bacon (great for baked potatoes!), and Raspberry Vinagrette.  The salads we make are delicious, as close to calorie-free as you can get, filling, and nutritious.  And they've helped me lose over 25 pounds since August.

I personally love coleslaw.

diced carrot, cabbage, broccoli, cauliflower, and zucchini. Doesn't matter how much or what you put in it really.

then for dressing mix:
lemon juice
lime juice
black pepper
paprika
sesame
and some splenda (splenda is just there to take a bit of the sourness away). then pour it on top and mix. This dressing can be used on basically any salad, very refreshing.

it's very low calorie, healthy and filling.

 

anther salad for a meal would be...

lettuce (iceberg or romaine),
spinach,
frozen or fresh raspberries(1/2-1cup),
1 orange (peeled and chopped, half orange per salad)
6oz  boneless skinless chicken breast  (3oz per salad)
1/4 of sliced almonds
sesame

cook the chicken in strips and in pam, or BBQed if the season is right with low cal BBQ sauce.

you won't need dressing, the dressing will come from the fruit. You'll get plenty of protein from and chicken, spinach and almonds.
