@cupcake: thank you, thank you, thank you. Your words are extremely encouraging, and exactly what I needed to read. It is the sick mind games, it's the clothes that had once been loose now, suddenly, fitting more tightly. You're right though -- it's relatively miniscule. Thanks for tellin' it like it is.

Thank you guys so much for sharing your helpful advice and similar experiences. I'm going to suggest some of these things to her, and they sound very reasonable. She's a super picky eater, and nothing suggested was ridiculously strange (or expensive)!

So, the way one discovers one's own food intolerance is by cutting it out of their diet for a week and seeing what happens? Would it be sufficient to just limit one's intake of gluten products over the course of a week?

fluffydragon, could you tell me more about IBS and the difference between gluten intolerance, wheat allergy, and celiac disease? Do you know how we could figure out what is going on with my girlfriend's stomach? Your husband's condition sounds really severe. My girlfriend only complains about stomach tension/crampiness. I've heard of people who can get allergies during stressful life periods. Also, she doesn't break out in hives when she eats or touches breads and pastas.
