The blog Purely Twins has a lot of single serving protein cake recipe (as well as other single serving recipes). Most of them are "baked" in the microwave. I've tried a few with some success.

I think 2-4 appetizers per person is reasonable. Not everyone will take every item... or some people will take more! It depends on the size, I suppose.

I don't think the bacon-pineapple combo would be good cold. The pineapple will really absorb the salt from the bacon and the bacon's texture will be not as good cold as it would be hot. I'd suggest ham slices instead or do proscuitto wrapped around canteloupe or honeydew melon balls.

it's from the milk fat. That's why butter is also high in sat fat. However, dairy fat is not necessarily bad for you.

I'm surprised it's that low in protein though.

Homemade seitan (made from vital wheat gluten) is not hard to make. I haven't tried it but I have seen a recipe on the blog Fat Free Vegan.

My source for marinades is a book called Weber's Real Grilling. It's a great collection of grilled recipes.

If I'm making a marinade off the top of my head, soy sauce & garlic (particularly for red meats) are usually involved.

Trail mix is meant to be high calorie. It's original purpose is to provide energy to fuel someone through a long day of hiking. Its basic components (nuts + dried fruit) are very calorie dense. 

However, to increase the portion size without added too many calories, you could add some dry cereal like Cheerios or Chex or some pretzel sticks to the nut/fruit mix. Better yet, add some bite sized pieces of jerky.

Try plain yogurt instead of milk. Also, add nuts/seeds and berries.

Because she's baking a dish for vegans. Tofu is a decent sub for dairy, in this case.

Basically, anything labelled as a "meal replacement" is not worth the money. You will lose weight initially (due to a decrease in food) but gain it back after you stop taking the product. 

1200 calories a day is way too low.

My very first 5k time was a slow 45 minutes. Every other 5k since then has been between 30-36 minutes. I'm not a regular runner though. I do it 1-2 times a week. I'd love to get below 30 mins at some point.

Google recipes for "vegan ricotta". It exists! Usually tofu subs for dairy.

You can also make "cheese" from soaked cashews, though it will be softer than tofu ricotta.
