About:

Welcome! I invite you to share my low carb journey! My goals for this site are to: 1) help you to find out if reduced carbohydrate eating is a good alternative for you 2) help you to get all the best information about low carb eating 3) make it as easy as possible for you to provide yourself with tasty nutritious low carb meals. Along the way, I'll share my new discoveries with you, from the science journals to the kitchen.

Experience:

I've been creating and maintaining Web sites, mostly having to do with health and education, for many years. I love health writing and teaching – most recently I taught a health and nutrition class to 7th and 8th grade students. I've also moderated health-related online discussions both professionally and as a volunteer. Two of my favorite things to do are to read medical studies and write about it, and cook (my main creative outlet). I've developed many innovative low carb recipes. Since I have gluten intolerance (celiac disease) all of them are also gluten-free (no wheat, rye, barley, or oats).

Education:

I have a B.S. in physical therapy, a M.A. in clinical psychology, and most of a PhD in psych, part of which involved research in online communication. This blend of medical background and research has given me the knowledge and skills to pursue a longtime hobby of analyzing medical studies.

From Laura Dolson:

Almost 12 years ago, I was having a discussion with a friend about nutrition. She was following a low carb way of eating, and challenged me to read the medical literature on low fat vs low carb diets. I was positive I would come up with the "proof" that low fat eating was healthier. Imagine my growing shock over the next several weeks when I realized that I had been wrong! I now believe that the research is moving in the direction of proving that different diets are best for different people, mostly based on genetics. In my case, I will always eat a reduced-carb diet, and I find it to be totally satisfying – especially since I've learned to "de-carb" my favorite recipes and cook a wide variety of foods. I can help you do the same.
