Sorry...I came in and planned to post daily, but got bogged down with Summer quarter finals.  2 down, one to go:)  It's the most time intensive, though...doing a 2 factor anova write up , a 65 multiple choice take home, and prepping for an in class departmental exam on Tuesday...I hate Stats 3010!!!  On to the food...

I'm getting frustrated already.  Eating like I'm supposed to for a lower refined carb diet.  Eating lots veggie, fruits, lean meats, etc etc but scale hasn't been moving much.  Yesterday ate really well most of the day, but got super stressed working on finals and ended up eating a low carb burger that my sister picked up from Carl's jr for dinner because I didnt want to leave SPSS long enough to cook.  still was with in calorie allotment, but way over in fat.  Not letting it get me down, though and started fresh this morning.

Had:

B- sausage, egg, home fries made of small jewel yam, red bell pepper, garlic, red onion, cilantro, AlsoSalt, black pepper, cumin (made this yesterday with jicama and think I prefer it that way).  used a little cooking spray.

S: watermelon

L: (planned) boneless chicken, cabbage, onion, garlic, grey squash, chayote, black pepper, AlsoSalt, cooking spray. might hit it with a squirt of sriracha.

D: (planned) small whole tilapia and raw veggies: cucumber, tomato, onion, cilantro, lemon, valentina hot sauce,  1/2 c brown rice 

My breakfasts tend to be heavier on weekends, since during the week it is just fruit and a little cheese or a hard boiled egg.

Need to focus on water consumption this month, since didnt have more than 2 cups a day in past 2 days.

@Muppet-  thanks:)  I have the same issue with school/work.  I work 830-5 M-F and have classes 3 times a week from 6-950:(  I've bought a mini fridge for my desk that I have been keeping fruits, veggies, hummus, waters, and cheeses in.  I also have lots of nuts around...when I'm running to school I grab some nuts and fruit, or a little ziplok container with raw veggies and hummus.  The hummus keeps surprisingly well... Sometimes I'll also bring a little pouch of tuna and a small boiled sweet potato (in a little container).  It's kind of stinky, but the tuna doesnt need refrigeration and it's pretty tasty and filling on the sweet potato, especially with a little sriracha:)

Been gone for a while and coming back...highest was 361, started working on things again and am at 354.  I previously lost 60 lbs and have put it back on and then some.  My doctor suggested that I not necessarily count calories, but focus on not eating refined carbs and starchy veg/fruits.  As have PCOS and hypothyroidism. 

This time I am super motivated, because my dad is going to need a kidney donation, and I have to lose a significant amount of weight to be a viable candidate, so...I welcome the structure and support, as well as the verbal ass kickings when needed:)  today have eaten:

B: 2 eggs scrambled with cabbage, zucchini, tomato, red onion and red bell pepper, lots water

S: pear

L: 1 boneless chicken thigh braised in tomatoes, onion, garlic and zucchini. small sweet potato.

Ben & Jerry's mint cookies and cream is my fave!!!

 

 

but i love baskin robbins too..especially their rainbow sherbet.

Totally agree!!!  that jerk sauce makes me crave BWW hecka hard!  but...I only like drumettes.

i mix mine with fat free plain mountain high yogurt (i heart it cuz its super thick), course deli mustard, a little chili flake, pinch salt and black mustard and chopped cucumber, red onion, tomato and celery...extremely yummy and makes super big serving.

grilled chicken/fish fajittas with extra veggies and corn tortillas

boiled/grilled chicken burritos minus the flour tortilla

salads with boiled/grilled chicken and hot sauce/lemon juice as dressing

baked chicken enchiladas minus cheese on top

side of beans (whole black or pinto) refried isnt bad if there isnt lard in them. refried is a misnomer...they arent double fried..refrito means very fried or very cooked depending on who you ask.  they are usually boiled dried beans which are then mashed and fried (more acurately sauteed) once.

if they serve soup, most are really pretty healthy and low fat...menudo, caldo de res, caldo de pollo or chicken posole are all very good with a corn tortilla and some fresh squeezed lemon/lime juice should be awesome.  i also like to put some shredded cabbage with lime and a little salt on top of my soups.

they bring a nurse to our office to administer the shot and she was telling me that people often ask her if they will get the flu after the shot.  Even after she tells them they wont, they always ask her if she's sure...like she hasnt been a nurse for 20 years and has no idea of what she's talking about.  People are nerds!

I have a 6 lb chihuahua and the walk is short...generally 10 minutes 2 times a day (my next door neighbor also walks him in the afternoon with his dog), gym is about a 5 minute drive and I stay 45 minutes to an hour (sometimes more), shopping is generally Saturday early mornings for produce and sundries, Tuesday night as soon as I get home for meat, reading for pleasure is during commute, at gym (depending on machine utilized) or weekends, studying at lunch at work, waiting for carpool pick up and later in evenings, classes currently monday and wednesday nights 630-9 and online (though proff lets us out closer to 830 most often), friends weekends and friday nights, tv is dvr-ed and watched throughout week, I sleep 5-6 hours a night as I always have. 

 

I also donate blood every 8 weeks on saturday afternoons, take in a drive in movie every two weeks on a saturday night, and volunteer at an animal shelter 2 times a month on a satuday or sunday.  Unless I'm volunteering, my Sunday is the day I do almost nothing.  It's not for everyone, but I like the fact that my life is busy and I dont feel overwhelmed unless it's around finals time.

healthy food can be cheap...it depends on where you live and where you shop.  I live in the bay area and shop at places like the Berkeley bowl (berkeleybowl.com) and larry's produce stand (larrysproduce.com) and can get a week's worth of fruits, veggies, herbs, and grains for less than $10at either.  Add to that meat that i buy at raley's (74 cents/lb chicken thighs, $1.87 boneless skinless breasts, $2.99 sirloin, 1.99 pork loin chops, 1.99 trout, etc ) , Safeway (1.67 pork loin chops, buy one get one free chicken breasts, 1.99 breasts, 1.99 chuck roasts, 69 cent thighs/drumsticks/quarters, 3.99 ny strip bone in, 4.99 salmon, 65 cent/ lb whole chickens) or my local Mexican butcher shop and freeze in individual portions.  Also, when I make too much of anything freeze-able (this includes things people forget about like pasta and rice, in addition to stews, soups, etc) Ialso freeze the extras in individual portions (yay for freezer bags and sharpies) for a quick meal in the future.

I commute an hour and a half to an hour forty five each way for work, but I still make it work.  I'm not saying it's easy, but it can definitely be done, inexpensively, and in a way that still allows me time to study, take college classes (usually 3-4 classes at night, on weekends or online depending on semester), walk my dog, go to the gym, play video games, read, watch tv, and make time for my friends.

4. my twin star fc console that allows me to play alll the old school nintendo games.  i <3 it!

I have hypothyroidism and swollen thyroid...if that is the problem, all of the glands wouldn't be swollen, just the thyroid in front at the base of your neck where a bow-tie would sit (it's kinda butterfly shaped too).  If it is hypothyroidism, you would probably have some of the following symptoms: hair loss, weight gain with poor appetite, feeling cold, tiredness, weakness, difficulty concentrating, memory loss, tingling, numbing, breathlessness, course/horse voice, or heart rhythm disturbances. 

Hyperthyroidism or iodine deficiency can also cause enlarging of the gland, however.
