I love Chicago, but have only been there a few times (hate O'Hare!). I grew up in Florida and have lived up and down the east coast (college, grad school) in big cities prior to the midwest. I came here about 5 years ago. |

Ok, I don't eat hamburgers, only veggie burgers, but I sure do like ketchup, onions, tomatoes, and lettuce. Avocado, sauteed onion, and swiss if I'm being a little naughty. |

Thanks for the suggestion! I'll see if the local supermarket or health food store can order some, but sadly, I do not have a Trader Joe's or a Whole Foods anywhere near where I live. The nearest ones are in Madison (1.5 hours away). Sigh . . . |

Hi Folks!
I'm not Vegan, but am a pescaterian (I eat fish) who rarely eats eggs but sometimes cooks with them. I do use skim milk occasionally but am working on adding in soy milk and taking cheese and other dairy (high sodium, fat, etc.) out of my diet. I'd love to hear protein rich/entree recipes for anything not made with beans--I'm allergic to all except (thank goodness!) soybeans, garbanzo beans, and string beans. Does anybody have any? :-) I've got several tofu recipes, but not much else. What about using seitan or tempeh or MS farms or Boca or other meat substitutes? I tried TVP, but it ('scuse me for sayin' this!) gave me a one-way ticket to the bathroom. :-) |

How about spaghetti squash? I'm addicted to it. An easy prep is:
Halve it, bake it cut side down on a cookie sheet for 30-45 minutes at 400 degrees, scoop the tender insides out of the shell, separate the "meat" of the squash into strands using a fork, and toss it with the following "sautee": Combine and sautee 1 TBL olive oil (or no-stick spray) with as much garlic as you like in a no-stick or user-friendly frying pan, fresh basil and oregano. After the garlic and herbs have become "aromatic," add any of the following you like:
"Finish" the toppings/sauce, if you want, with either a sprinkling of parmesan or soy cheese and serve on the cooked spaghetti squash, which you have separated in to strands with a fork. BIG YUM! :-) Good luck with the veggie thing! |

Nope, no beans except soy, garbanzo, and string beans. Weird, huh? I know I can't eat kidney, navy, or black beans and haven't tried any others because I get short of breath, gag, develop a rash, and more . . . I can eat hummus and tofu, though! :-) |
