prolonging the life of feta cheese?

hi! I've been craving feta cheese for a while now, so I bought a (packaged) block of it for a not-so-cheap price. I haven't opened it yet - I saw on the back that you're supposed to finish the whole thing in 3 days, which I can't do alone! I did a bit of research and saw some stuff about storing it bathed in brine to prolong the life. Would this work? And how long would it extend the shelf life? Thanks!

Sorry, I don't know about the block stuff. But if you get certain brands of crumbled feta (like President's) they have natamycin, which is a natural mold inhibitor. I've had a container of feta in the fridge for over a month now, and it's still just fine.

I used to work in the cheese department at a grocery store.

If it comes in a tub (which it should) store it in the liquid that it comes in. If there isn't enough, or you spill it or something, you can also use water with some salt to store it. How long it keeps really depends on the brand and how they've made it/the ingredients, but if you store it properly it should keep at least 5 days. Most of the fetas I cut and packaged at work were supposed to be consumed within 21 days. I'm not sure why that one is dated so early.

you could freeze it, it will taste the same but the texture will be slightly different. i use it in pasta or scrambles after it's been frozen and i don't notice the difference. if you wanted to use it for salads though it might be more noticeable.
