Protein packed breakfast "cake"
2 packets of Weight Control oatmeal (I used bananna bread flavor but it called for Cinnamon)
6 egg whites
1/2 cup skim milk
6 tbsp splenda
1 tbsp vanilla
2 tsp cinnamon (I also sprinkle cinnamon on top before baking)
Mix and bake in oven in a 9x9 pan for appx. 20 minutes at 350.
I think it tastes better if you make it the night before. It has a bit of an egg/oatmeal texture but I love it ! Oh and the whole pan is only 2 servings !

I just made this....but, left out the splenda and the milk in the batter and let me say...

This tastes like a bread pudding, it is so good and it only has about 250 calories for half the cake! I have eaten a fourth of it so far and I am not hungry! It is great because my 21 month old loves it too!
I also made a "frosting/glaze" with 2 Tbs Peanut butter thinned with water and a splenda mixed in. It is just enough to give it some x-tra flavor on top.

So I think I'm going to try it, but can I use Kashi GoLean Vanilla Oatmeal instead of the weight control oatmeal?
I need some input from you guys as to how I could pull off making this
a) I don't have a cake pan
b) I only have access to a microwave.
Any way I could still make this happen?
Question: Do you beat the egg whites first, or just mix them in unbeaten?

Use a shallow microwave safe container of similar size. I'd spray it with non stick spray first. Microwave on medium for 5 minutes, then check and continue 5 minutes at a time until it's done. Since I haven't made this particular recipe, these are general instructions and may take some time to get it right.
Use a bowl, and just cover it when you're done and reheat the next day
isnt this just baked oatmeal? A cake might have baking powder I would think and involve pulverising the oats. Anyone tried baked oatmeal?
I just made this with some modifications.
3 packets of instant oatmeal (regular flavor)
6 egg whites
1/2 cup vanilla soy milk
1 teaspoon of cinnamon
2 tablespoons of brown sugar
2 tablespoons of wheat germ
It's less egg-y and more cake-y with the 3 packs of oatmeal with more fiber. The wheat germ helps with the color and texture. I don't use artificial sweetner ever so I measured brown sugar according to the amount of servings I'd have. The recipe analyzer wouldn't recognize my vanilla syrup (1 TBP) but it only adds 20 calories per serving.

recipe for days! I'm so glad I made it. Some days I just don't want to face the Grape Nuts. This would be great for get togethers too.
