Recipe Ingredients for Puerto Rican Seafood Rice Soup

Tuna Fillets
Seafood Mix
Rice, White, Long-grain, Regular
Iodized Salt
Peppers, Sweet, Green
Scotch Bonnet Chile Peppers
Onion Yellow
Coriander
Chives
Tomato Sauce
Garlic
Annatto Powder
Water
Extra Virgin Olive Oil

Recipe Directions for Puerto Rican Seafood Rice Soup

Soak rice in warm water. Make sofrito by chopping the onions, peppers, cilantro, garlic and chives and sauteeing in olive oil. When vegetables are soft, add tomato sauce and annatto. Cook for two or three minutes, then add seafood mix and fish fillets cut in squares. Add like 1/2 cup of water and let the fish and seafood simmer for 15 minutes, add salt. This will make all the flavors blend. Add the remaining water and pre soaked rice. Simmer until rice is tender. Season with salt to taste.
