Puff Pastry - Help!

Quote  |  Reply

I was planning to make a pie for dinner and would love to use a quarter sheet of puff pastry for the base. What I need to know is do the calories go up for cooked pastry rather than just when its uncooked? At uncooked, on the packet it says about 130cals per quarter. I looked up puff pastry on here and it says like 500 something cals for the same amount... So im really confused. And if it really is that much I will just go without.

Thanks for the help, as always :)

The packet information will tell you how many calories per 100g and it should be around 500-600.  Pastry is basically fat and flour so the calorie-count won't vary much from manufacturer to manufacturer.  If 1/4 of a sheet is about 25g then 130 cals would be right.... but that's not very much pastry.

If you take 100g of frozen pastry and cook it all you'll lose in the process is a bit of water.... so the calorie-count once it's cooked will be exactly the same.

as long as you don't add any additional carolies yourself, it wont go up in calories after cooking.

as for the discrepancy- as the above poster says, different manufacturers amounts will differ- just use the calories that your packet has on it to get the most accurate calorie content.

enjoy the pie. i love a good pie myself, a nice steak and ale Smile

There's really no way to make puff pastry low cal. However, you might try working with phyllo dough. It'll be more labor-intensive, but can cut out a lot of the fat.

This recipe outlines the method for using phyllo as a pie crust (then you'd fill it with whatever you wanted): http://lowfatcooking.about.com/od/holidayreci pes/r/pumpkinpie1104.htm

You can also make yeasted pie crusts, which will use a lot less fat. I've never tried them - I just saw this article on NY Times: http://www.nytimes.com/2009/06/22/science/22r ecipehealth.html

Thanks alot. Really helpful all of you and thankyou for those recipes!
