Pumpkin Brownies Recipe

Fall-themed brownies.

Ingredients
8 egg whites
1 cup sugar
1/2 cup brown sugar
1 cup pumpkin
1 tsp. vanilla
1 tablespoon unsweetened applesauce
1 1/4 cup unsweetened cocoa powder
1 cup flour
Directions
  1. Preheat oven to 350. Lightly coat a 9x13" baking pan with vegetable cooking spray.

  2. In a large bowl, using an electric mixer, beat the eggs whites and sugars until smooth.

  3. Beat in the pumpkin, vanilla and applesauce.

  4. Sift together cocoa and flour. Add to the pumpkin mixture, beating just until combined.

  5. Pour batter into the prepared pan and bake for 25 minutes.

  6. The brownies will still be a little soft in the center.

  7. Remove from the oven and cool for 3-5 minutes before cutting.
