Pumpkin Chickpea Stew

Recipe Ingredients for Pumpkin Chickpea Stew

8 cups Cooking Stock
3 carrots
1 red onion
2 stalks celery
8 oz mushrooms
3 cloves garlic
1 apple
30 oz pumpkin puree
1/3 cup Almond Butter
10 oz kale
7 cups dry chick peas
1/4 tsp salt
1 tsp brown sugar
1 1/2 tsp cumin
1 1/2 tsp cinnamon
1/4 tsp cayenne

Recipe Directions for Pumpkin Chickpea Stew

  1. Soak chick peas overnight.

  2. Add a few tablespoons veggie stock to a hot stock pot. Sweat veggies and diced apple until soft.

  3. Add spices, turning to coat.

  4. Add remaining stock, almond butter and pumpkin puree and combine. You can puree the veggie base a bit at this point. Add re-hydrated chick peas and kale.

  5. Heat through, or until chickpeas are tender.
