Pumpkin Chocolate Chip Muffins
Tis the season for pumpkin goodness... some coworker of mine gave me this recipe. It came out good! (and its a bit less fattening using applesauce and low fat milk):
2 1/2 c flour
1 1/3 c sugar
2 tbsp baking powder
2 tsp salt
2 tsp cinnamon
1 cup chocolate chips
2 eggs plus 2 egg whites beaten
1 cup low fat milk
1/2 cup applesauce
1 cup pumpkin puree
3 tsp vanilla
Preheat oven to 350, spray muffin pans w/ nonstick spray
In large bowl, mix flour, sugar, baking powder, cinnamon & salt.
In seperate bowl, mix eggs, milk, pumpkin, applesauce, & vanilla. Add to dry ingredients and mix until moistened. Fold in chocolate chips.
Fill cups 2/3 full and bake @ 350 for approx 25-30 min until toothpick comes out clean
(this makes more than 24 muffins, probably about 30. i filled mine up to the top and theyre practically overflowing but 24 cups is all i had!)
I put in the recipie thing and this is what I got for 24 muffins. Not bad I might try it But will make them mini ones.

That sounds delicious. I use a similar recipe for pumpkin bread and I have always put dark chocolate chips in it. People always think it sounds like a strange combination until they try it and then they are hooked. Dark Chocolate + pumpkin = happiness!
