Pumpkin Gingerbread Bran Muffins (satisfying 100 calorie snack!)
Just made these last night, and they're all gone : ) It's not an overly sweet muffin, but they're super dense and satisfying. A very wholesome, good-for you muffin, and only around 100 calories a for one regular sized muffin (97 to be exact ; ) )
I don't really believe in artificial sweeteners in baking, and I'm not sure I would suggest it here; just wouldn't be quite the same!
Edit: Makes 12 regular-sized muffins...I bet they be delicious as minis, though.
Pumpkin Gingerbread Bran Muffins
1 1/2 cups wheat bran
1 cup skim milk
1/2 cup pumpkin
2 large egg white
1/2 cup light brown sugar
1 tbsp dark molasses
1/2 teaspoon vanilla extract
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 tsp cinnamon
1 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1 tbsp grated orange rind
Directions:
- Preheat oven to 375 degrees, and spray muffin tin with cooking spray.
- Combine buttermilk with wheat bran and let stand for 10 minutes. (Note: If you don't have buttermilk, combine skim milk with 1 tbsp lemon juice, and let stand for ten additional minutes before adding to wheat bran)
- In the meantime, whip eggwhites with molasses, vanilla extract, spices and orange rind. Beat in light brown sugar gradually. Beat in pumpkin.
- Mix the remaining dry ingredients: whole wheat flour, salt, baking soda, and baking powder.
- Stir together the wet and dry mixes. Spoon mixture into sprayed muffin cups.
- Bake for 20 minutes. Let cool for a few minutes, and enjoy!
Rough Nutritional Breakdown: 97 calories, .5g fat, 22g carbs, 4g fiber, 8g sugar, 6g protein

Darn, I was totally planning on making these tonight until I saw the instructions- don't have skim milk OR buttermilk. Only almond and some light whipping cream. I wonder if I could finagle something out of that...
I bet they might work with almond milk, especially if you beat your whites seperatly and fold them in (to make up for the lightness that buttermilk provides, maybe?). It could be a fun experiment : ) Or, you could use applesauce instead of pumpkin, mix up the spices, add almond extract...and have a whole new muffin! Maybe and even more delicious one!

I sub'd Fiber One cereal (the plain bran; only cereal I had that wasn't sweetened like Lucky Charms) and let those soak in skim milk w/ less than tsp. vanilla extract. I didn't use grated orange rinds and only used a 1-1/2 tsp pumpkin pie spice and 1/2 tsp cinnamon (rather than all the spices I didn't have). Was very, very tasty.
I made them for breakfast, grrrrr, I was still hungry (tummy growling for Food). Though the recipie does make 12 regular sized muffins, like you said, they are snack - a very tasty snack indeed ! I highly recommend your recipe : )
