| 2 | eggs |
| 1 | teaspoon vanilla essence |
| 1 | cup pumpkin, cooked |
| 2/3 | cup non-fat powdered milk |
| 3 | teaspoon cinnamon |
| 1 | teaspoon baking soda |
| 8 | teaspoon splenda |
| 6 | tbsp flour |
| 1/2 | cup carrot, grated |
- Cook pumpkin, then mash when cool.
- Blend eggs, vanilla and pumpkin together.
- Mix dry ingredients together.
- Add egg and pumpkin mixture and mix.
- Add grated carrot and mix.
- Bake at 350' for 15 - 25 mins. In my gas oven it only took 15 mins but may take longer in other ovens.
