Pumpkin Mini Muffins Recipe

Makes 36 servings


great mini muffins for snacks or recess for kids, very moist. Great for on the go.

Ingredients
2 eggs
1 teaspoon vanilla essence
1 cup pumpkin, cooked
2/3 cup non-fat powdered milk
3 teaspoon cinnamon
1 teaspoon baking soda
8 teaspoon splenda
6 tbsp flour
1/2 cup carrot, grated
Directions
  1. Cook pumpkin, then mash when cool.

  2. Blend eggs, vanilla and pumpkin together.

  3. Mix dry ingredients together.

  4. Add egg and pumpkin mixture and mix.

  5. Add grated carrot and mix.

  6. Bake at 350' for 15 - 25 mins. In my gas oven it only took 15 mins but may take longer in other ovens.
