Low-calorie, basically fat-free version of Libby's famous pumpkin pie. 155 calories for 1/8 of 9-inch pie. Cool whip and pie crust are extra.
| 3/4 | cup splenda |
| 1 | tbsp cornstarch |
| 1 3/4 | tsp pumpkin pie spice |
| 1/2 | tsp salt |
| 1/3 | cup egg beaters |
| 15 | ounce pumpkin |
| 12 | ounce evaporated skim milk |
- Combine dry ingredients in small bowl.
- Stir together pumpkin and egg in large bowl, then mix in dry ingredients.
- Slowly add milk and stir until all ingredients are thoroughly mixed.
- Pour into 9-inch pie pan. If desired, pour into 9-inch deep dish unbaked pie shell (not included in nutritional info).
- Bake in pre-heated 425 degree oven for 20 minutes, then reduce heat to 350 and bake for 1 hour, or until top or pie is browned and knife inserted into center extracts clean.
- Allow to cool before serving. Do not freeze (refrigeration is fine).
