Tasty alternative to pumpkin pie. Use Jell-o Sugar Free, fat free vanilla pudding mix, I just put corn starch to get the calories/dietary info close.
| 1 | cup pumpkin, canned |
| 2 | cups skim milk |
| 3 1/3 | tbsp cornstarch (actually 1 package jello fat/sugar free vanilla pudding...much tastier, just had to get the calories) |
| 1/2 | tsp pumpkin pie spice |
- Mix pudding, refrigerate for 5 minutes.
- Mix in pumpkin, pumpkin pie spice
- Spoon into 1/2 servings and refrigerate for at least 10 minutes.
