Pumpkin Ravioli Sauce

Hello, this is my first post. I am plugging along with my own diet. I have some difficulty finding foods to make that are healthy and yet filling and leave me satisfied. Veggies for dinner just don't do it for me!

One meal I have found that I like very much is Pumpkin Ravioli. There is an international market near my house that sells this frozen and it is made my a local pasta company. I have found the raviolis to be pretty low fat and low calorie, especially for dinner.

What I am having trouble with, however, is a good sauce to make to put on the ravioli's. They are the best with browned butter and sage, but not very healthy. Tomato just isn't right and even olive oil doesn't sound good either. Does anyone have any ideas to make this meal complete? Thank you.

what about browning them with some butter flavored Pam or using a little Smart Balance butter (a little healthier) and then still adding sage and maybe a few pecans for crunch.

I wonder if you could also make a soup of sorts out of it and put them in some broth and still add the sage?

I don't have a recipe on hand becuase I buy mine but I love pumpkin or sweet potato ravioli drizzled with a little romesco sauce. Two tablespoons is more than enough for me and it's heavenly.

i love them with a tablespoon of basil pesto..yum yum

I don't know if this would be pumpkin overload for you, but I like to make a pasta sauce with a little bit of canned pumpkin, chicken broth, sage and salt.  It's really good over pasta with a tiny bit of strong flavored cheese, like Romano, sprinkled on top.

I have also made pumpkin ravioli with tomato sauce.  I saute some mushrooms and peppers with garlic and a little bit of plain tomato sauce.  This is especially good if you add some proscuitto as well.

I love pumpkin ravioli and always eat it with just 1/2-1 tbsp melted light butter and fresh sage drizzled over the top.
